Laurel Lee Larsen

Laurel Lee Larsen, a beloved mother, grandmother, great-grandmother, and great-great-grandmother, was called home on July 23, 2026. She was born on October 14, 1939, in Payson, Utah.

Laurel attended Utah State University and Brigham Young University, where she originally planned to pursue a career in teaching and also completed her license practical nursing degree. Although her path took her in a different direction, she found great success as an exceptional cook at Trails Inn in Spanish Fork, Utah.

In 1964, Laurel married Rex Larsen which they then later divorced. She became a mother to Cindy, John, Tammy, Casey, and Lori, and later welcomed Terrill and Shane Larsen into their family. Her family was her proudest and greatest accomplishment in life. Her love for them was something everyone around her could feel.

She made the sacred decision to enter the Manti Utah Temple of The Church of Jesus Christ of Latter-day Saints, where she received her endowments.

Laurel lived her life spreading love, laughter, sarcasm, and plenty of sass to everyone lucky enough to know her. She loved spending her time working on crossword puzzles, watching old cowboy shows, and (according to her family) “winning" at card games.

Some of Laurel's happiest moments were found in the kitchen, where she could often be found baking her famous pumpkin rolls or making her delicious lemon meringue pies. These treats, along with her warm hugs, and unforgettable personality, are memories her family will never forget.

Laurel is survived by her loving children, grandchildren, great-grandchildren, and great-great-grandchildren, as well as her nieces and nephews.

Laurel's family finds comfort knowing she has returned home and is reunited with loved ones who have gone before her. Her love will continue to live on through generations to come.

A viewing will be held from 9:30-10:30 a m. at 94 West 300 North, Nephi, Utah. A graveside service will follow at 11:30 am at 420 South 400 East, Spanish Fork, Utah, ending with a luncheon which will be held afterward at 356 South 200 West, Nephi, Utah, Friday, August 7th.
