How does one go about fitting 58 years full of life into just a few paragraphs? Well, let’s start at the beginning. 

Stacey Aperges Hembury was born on September 19, 1968, to Pete Aperges in Price, Utah. Stacey was blessed with a mom, Sherry Kindel, in her 20s. Stacey grew up in Rose Park, Utah, and graduated from Judge Memorial Catholic High School in 1986. Stacey welcomed her first son, Alec, in May of 1990, who then got to be the guest of honor at his parents' wedding when Stacey married Shane Hembury on July 28th, 1990. The couple was very excited to welcome their second son, Brendan, in 1996. Stacey made the midlife decision to go back to school and was very proud (as she should be) when she received her Master's degree in Mental Health Counseling in 2015. 

Stacey’s career choice was no surprise to anyone who knew her, she had an almost magical level of empathy and the ability to make even the most stoic person open up. Stacey was warm, authentic, and accepting, all while possessing a quick wit and a sharp sense of humor. She always rooted for the underdogs, from her favorite sports team (the Carolina Panthers), to adopting shelter dogs who needed extra care. Stacey never hesitated to stand up for herself or those she cared about, teaching everyone around her that they deserved to be confident and conscious of their self-worth. 

Stacey loved going to concerts with her sons, spending time with her grandkids, good conversation, a deep belly laugh, and relaxing with her dog, Hazel. It was while sleeping next to Hazel, on October 1, 2026, that Stacey peacefully departed to be with friends and family that she has missed for many years.

Stacey is survived by her husband of 36 years, Shane. Her sons (and daughters-in-law who loved her like their own mom), Alec (Danielle) and Brendan (Brooke). Her 5 grandkids, who will miss her very much. Her mother-in-law, Lavern Hembury. Her dad, Pete Aperges, her mom, Sherry Kindel, and brother Michael. All of her clients, who occupied a very special place in her heart. A host of extended family and friends. And of course, Hazel. 

She is preceded in death by her beloved Grandparents, Clara and José Martinez. Her father-in-law, Stuart Hembury, and his parents Donna Hembury Evans and Owen Evans. Her stepsister, Angie McMinn. Close family friends, Vera and Willard Chipman. A whole house full of cherished pets will also be waiting for her on the other side. 

Stacy was a fighter and just as she fought cancer with a ferocity that only she could muster, she would also love a moment to fight against corporations taking money under the guise of cancer research, so in lieu of flowers, Stacey requested that donations be made to West Valley Animal Shelter.

A viewing will be held on Thursday, October 8th from 6-8 pm at Goff Mortuary, located at 8090 S. State Street Midvale, UT 84047.
